Prepare the Dough

In a large mixing bowl, combine the melted butter or vegan butter, almond flour, and egg yolk. Mix until smooth.

Gradually add the buckwheat flour and agave syrup to the mixture, stirring until well combined.

Fold in the chopped walnuts and crumbled Stilton cheese, ensuring they are evenly distributed throughout the dough.
Chill the Dough

Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for 30-45 minutes. This will make it easier to roll out and cut the crackers.
Shape the Crackers

Preheat your oven to 175°C (350°F) and line a baking sheet with parchment paper.

On a lightly floured surface (using buckwheat flour), roll out the chilled dough to about 5mm (¼ inch) thickness.

Cut the dough into evenly-sized crackers, poke some small holes in the center of each cracker using a fork, and then transfer them to the prepared baking sheet.

Separate the crackers, leaving some space in between each individual one on the baking sheet.
Bake the Crackers

Bake in the preheated oven for 15-18 minutes, or until the crackers are golden-brown in color and crisp.

Allow the crackers to cool on the baking sheet for five minutes before transferring to a wire rack to cool completely.
Note
Store the crackers in an airtight container at room temperature for up to five days. For longer storage, freeze them and reheat to restore their crispness.
