This recipe is also ideal for pescatarians—try to find leaf gelatin, which is often made from fish bones instead of pork, making it a great choice for those avoiding traditional gelatin.

  1. Soak the gelatin sheets in cold water for 5-10 minutes until softened.

  1. Gently heat the tea with agave syrup over low heat, making sure not to let it boil too much. Remove from heat just before it starts to steam. 

  1. Squeeze out the excess water from the gelatin sheets. Stir the softened gelatin into the warm green tea until completely dissolved.

  1. Allow the tea to cool slightly again, then gently mix in the kombucha, stirring to combine.

  1. Pour the mixture into silicone molds or a shallow dish. Refrigerate for at least 1 hour, or until set.

  1. Once set, pop the gummies out of the molds or, if using a dish, cut them into squares. Store the gummies in an airtight container in the fridge for up to one week.

Note

It is very important to only heat the tea and not the kombucha, as heating the kombucha will destroy its beneficial probiotics.
