Grind the pistachios into a fine flour.

In a measuring cup or small bowl, whisk together the pistachio flour, matcha, baking soda, and salt until the ingredients are evenly combined.

Add the maple syrup (or preferred sweetener), coconut oil, milk, and egg, then whisk until smooth and fully incorporated.

Pour the batter into a microwave-safe mug (6- to 8-ounce size is ideal).

Place the mug in the center of your microwave and cook on high for 1-2 minutes. The cake is done when it has puffed up and a toothpick inserted in the center comes out clean. Cooking time may vary depending on the wattage of your microwave. For a 900-watt microwave, 90 seconds should be sufficient. Adjust accordingly for higher or lower wattages.

Pour the batter into an oven-safe, 6-ounce ramekin.

Bake in a preheated 350°F (180°C) oven for 18-20 minutes, or in a 325°F (160°C) air fryer for 13-15 minutes. The cake is done when a toothpick inserted into the center comes out clean.
